Where I live, we still have several weeks before school starts. I do know that in many other states, your kids are already back in school. Getting adjusted to the school year routine after a long summer, can be hard. That is why I wanted to share some of my favorite slow cooker recipes with you. Using a slow cooker means that with a little prep and thought, you can have a delicious dinner on the table for your family, without slaving over a hot stove all day. Sounds great, doesn’t it? Beer-Braised Pot Roast
One of my favorite slow-cooker recipes is Braised Pot Roast and this recipe found online at Southern Living for Beer-Braised Pot Roast is amazing! There is some prep involved, but it is well worth the effort. You also need to allow for eight to ten hours of cooking time to be its fork-tender best. The beef is braised with coffee and beer and surrounded with garden fresh vegetables. Serve with some great crusty bread, because you are not going to want to let one drop of this delicious sauce go to waste.
Another favorite of mine is Chicken Cacciatore. My family never made it in a slow cooker, but I have, and it is so easy. Taking this shortcut, does not shortcut the taste. You can find my recipe HERE.

Minestrone is so good and good for you. This Crockpot Minestrone recipe from How Sweet It Is, is so easy to make, just put half the ingredients in and let it cook, and add the other half before your eat. You can also make enough to freeze half, so you have it on hand for super quick meals.
